Grilled Garlic and Herb Chicken Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions:

  1. Prepare the Marinade:
    • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped rosemary, thyme, parsley, salt, black pepper, and red pepper flakes if using.
  2. Marinate the Chicken:
    • Place the chicken breasts in a large resealable plastic bag or a shallow dish.
    • Pour the marinade over the chicken, ensuring all pieces are well coated.
    • Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2-4 hours for maximum flavor.
  3. Preheat the Grill:
    • Preheat your grill to medium-high heat (about 375-400°F).
  4. Grill the Chicken:
    • Remove the chicken from the marinade and discard the marinade.
    • Place the chicken breasts on the grill.
    • Grill for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F and has nice grill marks.
    • Adjust the cooking time as needed based on the thickness of the chicken breasts.
  5. Rest and Serve:
    • Remove the chicken from the grill and let it rest for 5 minutes before serving. This helps the juices redistribute and keeps the chicken moist.
