Recipe: Low Carb Chicken Broccoli Casserole

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 2 cups broccoli florets, steamed
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup almond flour (optional, for topping)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked chicken and steamed broccoli.
  3. In a separate bowl, mix together the cheddar cheese, Parmesan cheese, sour cream, heavy cream, garlic, onion powder, salt, and pepper until well combined.
  4. Pour the cheese mixture over the chicken and broccoli, and stir until everything is evenly coated.
  5. Transfer the mixture into the prepared baking dish and spread it out evenly.
  6. If desired, sprinkle almond flour evenly over the top for a crunchy topping.
