- 4 boneless, skinless chicken breasts
- 1 pound baby potatoes, halved
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Season Chicken and Potatoes: In a large bowl, toss the chicken breasts and halved potatoes with olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper.
- Sear Chicken and Potatoes: Heat a large oven-safe skillet over medium-high heat. Add the chicken breasts and potatoes, cooking for about 3-4 minutes on each side until the chicken is golden brown. Remove the chicken and potatoes from the skillet and set aside.
- Make the Sauce: In the same skillet, add chicken broth and bring to a simmer. Stir in the heavy cream and continue to simmer for 2-3 minutes until the sauce thickens slightly.
- Combine and Bake: Return the chicken and potatoes to the skillet. Sprinkle shredded mozzarella and grated Parmesan cheese over the top. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Serve: Garnish with chopped fresh parsley and serve hot.
