Ingredients:

  • 1 cup cooked quinoa or brown rice
  • 1 cup mixed greens (spinach, kale, or arugula)
  • 1/2 cup roasted sweet potatoes, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/2 cup chickpeas, drained and rinsed
  • 1/4 cup red cabbage, shredded
  • 1/4 cup avocado, sliced
  • 2 tablespoons hummus
  • 2 tablespoons tahini dressing
  • Fresh lemon wedges (optional)
  • Salt and pepper to taste

Instructions:

  1. Start by arranging the cooked quinoa or brown rice at the bottom of a large bowl.
