Ingredients:
- 1 cup cooked quinoa or brown rice
- 1 cup mixed greens (spinach, kale, or arugula)
- 1/2 cup roasted sweet potatoes, diced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/2 cup chickpeas, drained and rinsed
- 1/4 cup red cabbage, shredded
- 1/4 cup avocado, sliced
- 2 tablespoons hummus
- 2 tablespoons tahini dressing
- Fresh lemon wedges (optional)
- Salt and pepper to taste
Instructions:
