Spicy Chickpea and Spinach Stew

Warm up with a comforting bowl of Spicy Chickpea and Spinach Stew. This hearty dish combines the earthy flavors of chickpeas with the vibrant freshness of spinach, all simmered in a flavorful spicy broth.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 4 cups fresh spinach leaves
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. In a large pot or Dutch oven, heat olive oil over medium heat.
  2. Add diced onion and saut until softened, about 5 minutes.
