Delicious Keto Brussels Sprouts in the Instant Pot

Enjoy these quick and flavorful Keto Brussels Sprouts made effortlessly in the Instant Pot. Perfectly tender and seasoned to perfection, they make a healthy and delicious side dish for any meal.

Ingredients:

  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil or avocado oil
  • 3 cloves garlic, minced
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • 2 tablespoons butter (optional)

Instructions:

  1. Prepare the Brussels Sprouts:
    • Trim the ends and halve the Brussels sprouts. If they are very large, you can quarter them.
  2. Sauté:
    • Turn on the Instant Pot and select the ‘Sauté’ function.
    • Add the olive oil and let it heat up.
    • Add the minced garlic and sauté for about 1 minute until fragrant.
    • Add the Brussels sprouts and sauté for about 3-4 minutes, stirring occasionally, until they start to get some color.
  3. Pressure Cook:
    • Add the chicken or vegetable broth to the Instant Pot.
    • Season with salt, black pepper, smoked paprika, and red pepper flakes if using.
    • Cancel the ‘Sauté’ function.
    • Secure the lid on the Instant Pot and set the valve to the ‘Sealing’ position.
    • Select the ‘Manual’ or ‘Pressure Cook’ function and set the timer for 2 minutes on high pressure.
  4. Quick Release:
    • Once the cooking time is up, do a quick release by carefully turning the valve to the ‘Venting’ position.
    • When the pressure is fully released, open the lid.
  5. Optional Finishing Touches:
    • For extra flavor, you can stir in 2 tablespoons of butter and sprinkle with grated Parmesan cheese before serving.
  6. Serve:
    • Transfer the Brussels sprouts to a serving dish and enjoy!

Tips:

  • If you prefer your Brussels sprouts a bit more tender, you can increase the pressure cooking time to 3 minutes.
